Weber's Smoke by Jamie Purviance
Weber’s Smoke is an excellent cookbook for the beginner griller or seasoned smoker. Purviance starts by giving a tutorial on smoking. He covers grill types, wood types and what flavors can be expected from them, how to set up any grill for smoking, and everything else you need to know to start smoking. Smoking might seem intimidating to a novice cook, but Purviance describes the techniques clearly and simply so that anyone with a grill can turn out delicious smoked foods.
The recipes cover a range of smoked meats including pork, beef, poultry, and fish from a variety of cooking traditions. There are classic baby back ribs and smoked hamburgers, shrimp tacos, Moroccan beef tenderloin, and curry chicken. A few side dishes, appetizers, and sauces are also included. As the complexity of flavors vary, so do the complexity of preparation and the time commitment. The burgers and shrimp are done in ten minutes after a little prep work. The brisket is an all-day affair. But it’s all fun and delicious
